By Popular Demand - Mint Julep Liqueur

Mint Julep Liqueur

1 cup fresh spearmint leaves, firmly packed
1 1/2 cup Kentucky bourbon
1 cup sugar
2 cups water

Coarsely chop mint leaves and place in a clean 1-quart container with a tight-fitting lid. Add bourbon. Let stand in a cool, dark place for 1 week.

Use a fine-mesh strainer to strain out leaves. Transfer liquid to a clean container (larger than 1-quart). Make a simple syrup by bringing sugar and water to a boil over medium-high heat, stirring constantly to prevent scorching. When clear, remove from heat and let stand until just warm. Add to bourbon mixture. Cover and age for 1-3 months before serving.

To Serve:

Pour a bottle of Mint Julep Liqueur into a pitcher of crushed ice and let stand for 15-20 minutes to melt the ice. Pour into tall glasses garnished with fresh spearmint sprigs. This will be the smoothest mint julep you’ll ever taste.
